Sate Pulut

This recipe is originally a Balinese cuisine. It's usually served with a vegetable called lawar.

Cooking tips:

Chicken ground by yourself is better, for the meat ain't fatty.

Ingredients:

10 shallots
5 cloves garlic
5 chili peppers without seed
3 bird's eye chilis
1 cm greater galangal
Salt
½ tbsp white pepper
Shrimp paste
Palm sugar
1 tbsp coriander
Cooking oil
500 g minced chicken
Lime
15 Lemongrass stalks

How to cook:

1. Mash shallot, garlic, chili pepper, bird's eye chili, greater galangal, salt, white pepper, shrimp paste, palm sugar and coriander.
2. Mix mashed seasonings with cooking oil, ground meat and lime.
3. Set aside for 10 minutes.
4. Take a handful of dough, then attach it to lemongrass stalk.
5. Cover it with a banana leaf and grill.
6. When it's been half cooked, and the meat is pressed against lemongrass stalk, uncover banana leaves and continue grilling until cooked.

For 15 skewers.
