Soy Milk Empal Gentong

Wanna deliver healthy stuff in holiday? Serve ketupat without coconut milk? Try this one recipe. Replace coconut milk with soy milk. The taste ain't inferior to the original.

Cooking tips:

After soy milk is poured into the pan, stir gently, so that it's not damaged. Use medium or low heat.

Ingredients:

4 shallots
2 cloves garlic
2 candlenuts
½ knuckle turmeric, roasted
¼ tsp white pepper seeds
Salt
1 tbsp cooking oil
1 bay leaf
1 stalk lemongrass, crushed
300 g lean beef, boiled, diced
½ l soy milk
2 tbsp fried shallots
1 tbsp scallion, finely sliced

How to make:

1. Puree shallots, garlic, candlenuts, turmeric, pepper and salt.
2. Heat the oil. Saute the pureed ingredients.
3. Add bay leaf and lemongrass. Stir.
4. Add beef and stir well.
5. Pour beef broth and soy milk into the pan. Bring to a boil.
6. Cook beef over low heat until the flavors mingle. Remove from the heat.
7. Sprinkle with fried shallots and scallion.

For six servings.
